This week bananas are on super sale, so I am swimming in yellow deliciousness. Since, I need to use up all the bananas I purchased, there’s no time like the present to make some recipes I’ve been meaning to make. Today’s treat is not only delicious, but easy, quick, healthy, so simple to make even your kids could do it on their own.
Have you heard of the 2 ingredient cookies? These cookies are just oats and bananas. Talk about easy, right? To keep these cookies fresh & exciting, each time I make them, I do something different. This version, I added cinnamon and coconut. Next time who knows, maybe lime zest and pomegranates.
These cookies never last long in our house. And no that isn’t because I’ve got 5 kids. Well, partly, but also because they are so good, you can’t eat just one. Which is fine with me since I’ve got 3 bakers who can whip these up in the matter of minutes.
Healthy Coconut Oatmeal Haystack Cookies
Ingredients:
*1 c oats
*2 lg bananas
*1/4c coconut
Directions:
*preheat oven to 350 & grease cookie sheet
*mash the bananas,cinnamon, & oats together until dough forms
*fold in coconut
*bake for 12-15 mins depending on your oven.
*cool for 5 mins before transferring to wire rack or plate
~Enjoy

Hooray! Another way to use ripe bananas. I usually cut them into chunks and freeze them for smoothies, but we already have plenty of frozen, so I wasn’t sure what I was going to do with the ripened bunch sitting on our counter. I’m going to make these cookies right now!

Bananas are great frozen for smoothies. You csn also take frozen bananas in a blender and it turns into banana ice cream. We love doing that in the summer mo the. How did the cookies come out?

Oh my. The cookies turned out yummy! They were a hit with my husband, too
I’ve made frozen bananas into ice cream in our blender, and I pulse walnuts into it at the end. Delicious!

Walnuts is a great idea, which I didn’t think of before. I’ll have to remember that next time we do that.

I tried these cookies today and added some dried blueberries. Very easy to make, very healthy-no sugar added and all healthy ingredients!! I ate them with some of the chocolate I made with raw cocoa powder, definitely a bit of chocolate to yum them up even more 🙂 Thanks!!

I’m right there with you. So many times, when you see healthy, there is a hidden ingredient, which makes it not as healthy as it was portrayed. But these ones only have 3 ingredients, nothing hidden 🙂
