Walking My Way To A Better Mood

Friday, I had a terrible horrible no good very bad day, which put me in an awful mood.  The negativity monster, clung on to me, digging its claws down deep, not wanting to let go.  Feeling this way, seems so unnatural to me, since I’ve tried so hard to be positive and happy.  Not only was the monster clinging on, but a black cloud encased a bubble around me, adding an extra layer of unpleasantness.  It was that kind of day.
Now, I could have let this ruin the day for me and my kids, but instead I decided I needed to do something about this.  So, I grabbed my phone, headphones, & walked & walked & walked until the monster went away.  As I was walking, I made it a point to take in all the interesting & beautiful things I came across.  It’s amazing because once I started opening my eyes, I realized just how lucky we all are for such a beautiful planet which holds such amazing things.  After that realization, everything that had been stressing me out seemed so small……..so petty.  By the end of my walk, I was in a much better mental state.  Not only was I able to take care of myself and my family, but I was able to set a better mood for our upcoming weekend.
I can’t stress the importance of self care, how each of us need to make it a priority.  It’s just as important as taking care of our family, yet most of us put little to no efforts back into ourselves.  Why?  I know for me, I want to model a different approach to all 5 of my children, one where I’m just as important as the next member.  And so I walk and will continue to walk every time I need a space to breathe, regroup, & get my bearing straight.

5 Simple But Delicious Ways To Cook Chicken

How do you cook chicken?

Around my parts, chicken has been on sales each week for about a month now.  So we’ve been eating a huge amount of it.  I’ve been saving a lot of money but I’ve also gotten tired of cooking it the same way.  It’s become stale and boring for us, well me and the kids.  Hubby could eat the same thing every day for the rest of his life and he would be perfectly fine with it.  Men 😉

I’ve been experimenting with it and here’s a few things I found that work great & adds an extra umph to our chicken:

  • throwing my trusty green salsa over it in a crockpot, with a half of lemon squeezed over it & throwing the lemon on top
  • use vinegar with some spices, makes it super moist.  And it doesn’t leave a vinegar taste one might think
  • combine 2-3 different citrus juices with a few of your favorite herbs
  • add coconut butter in the cavity and/or under the skin (reg butter works too)
  • for chicken tenders use flaxseed meal instead of breadcrumbs to make it healthier

Happiness Is Simple

Yesterday, we were back home from our extra long weekend, spent at my happy spot in Maine.  4 days spent camping, spending most of our time outside, getting in tons of family time, relaxing, & having no expectations about my days…….letting it unfold naturally.
Driving home (it’s a 3 hr ride one way) I had plenty of time thinking about the last days.  As I was thinking about it all, I noticed my thoughts kept gravitating around the fact that we had so much fun doing simple things like riding bikes, going for walks, talking around the campfire, playing cards, listening to the band, going on firetruck rides, participated in an ice cream eating contest, & trying winning at candy bar bingo to name a few.  When we weren’t doing stuff, my little ones played hard enjoying the outdoors, & doing it all with a few simple toys like their bikes, a few coloring things, & cards.  The rest of the time they played on the playground or with rocks, pine cones, & dirt.  I don’t think any of us has been happier than we were this past weekend, which shows me 2 things:

1. Simple living isn’t just a fad……..it’s a way of life for us all
2. Happiness is simple, we just complicate it.

Not once during our whole trip did any of us miss anything that was left behind, other than our reptiles of course.  My life wasn’t miserable or unsatisfying because I didn’t have a 100 different kitchen gadgets or have 100 different TV channels to watch.  Instead having a lot less and  simplifying what we took (only taking the basics) we were content with having what we had, which brought us more happiness.  We were able to focus on things that mattered to us, rather than the distractions that over take our lives.  Even though I’ve been simplifying things at home, I realized I haven’t gotten as far as I would like to.  Yes, I did start but somewhere over the last few months, I’ve been slacking but taking a step back I was able to see this more clearly.
Simple living isn’t something that happens over night, it’s not a destination.  It’s a mantra, a motto, a belief……a statement that motivates you to strive to continuously reevaluate your life and put your focus towards what’s important.  Having this mini break from our every day not only gave me clarity, it showed me this is exactly where I should be & how I want to continue living.  If anything, it gave me more of an incentive.

Happiness is simple, yet so many people live without it.  If you stripped everything down, what would it take to really make you happy?

Yesterday we went to a Frozen themed birthday party for a little girl turning four. And because I love themed birthday parties I decided I needed to make a custom gift (even though we had a crazy, busy week and I didn’t have much time…).

A while ago I spotted the cutest gift, it was actually a print and not actual rocks. But it read “Our Grandpa Rocks” and has all the names of the children in the family printed on surrounding rocks. That framed print is $40 and I just couldn’t justify paying for it as cute as it is, but I put it on my to-do list to try to create something similar. The major difference is that I used real rocks because hey… rocks are free.



I have a mass of dry beans hanging out on my Lazy Susan. Where did they come from? I don’t know. How long have they been there? I don’t know. Why did I buy them? I don’t know. I do know that I would like to reclaim that little area of my kitchen to store something more useful and needed. I am not saying dry beans are useless, but for as often as I cook with them they may as well be. When I wrote up this recipe I wrote to use a can of black beans because it would be easier, and it will be what I am using in the future now that my black beans are finished. For this exact time I soaked the beans overnight then dumped them in the slow cooker juice and all.

Diy Healthy Bug Repellant Spray

Whether you’re camping or live in the county, this time of year the bugs are just awful.  Tomorrow, I will be at one of my favorite spots (Sebago Lake Maine), soaking in the sun, dipping my toes in the sand, & battling the swarms of black flies.  Last year, my little ones got eaten alive, since nothing seemed to work for them.  This year, I am determined to not offer up my little ones as live bait for them.  I’ve done quite a bit of research on this matter and have come up a simple, quick, & easy bug spray  that isn’t harmful to my girls, which seems to be working well at home.  So, I’m sure this will be a great comfort to my in combating all those pesky black flies this weekend.

DIY All Natural Bug Spray

2 parts distilled water
1 part witch hazel
25 drops Lavender essential oil
25 drops Peppermint essential oil
18 drops Citronella essential oil
4 oz. spray bottle

1. Fill spray bottle with the proper amount of water
2. Add the witch hazel to the water.  Since essential oils don’t mix well with water, you need something to act as an emulsifier, if you don’t have witch hazel on hand, try fractionated coconut oil, which I’ve read works just as well.
3. Add in each essential oil.  The amount you use depends on your desired scent.    Feel free to add as little or as much as you deem fit.
4. Shake before every use.

I loved this one because it was one of the only ones I found that didn’t use essential oils, just a few common ingredient everyone can acquire easily.

I thought this recipe was neat because it called for Epsom salt, which isn’t something I saw in a lot of other recipes.

I loved this for the ease and look.  It would be great to have camping, just throwing together a few ingredients and viola, you have added protection.

13 Healthy Living Hacks


Since, I’ve started my weight lost journey, I’ve made it a point to keep up with living as healthy as possible.  Sure, I have my moments of cheating but I made it a point to not let it turn into a lifestyle.  Instead, I’ve worked hard to keep up with living healthier.
Over the course of a year, I learned a few clever trick or hacks that have made my life a little easier, a little tastier.  To date, I’ve lost a total of 58lbs after I was told losing anything would be next to impossible because it was medically induced.  Below are a few clever solutions that help keep me on track and eventually get me to my ultimate goal of 148lbs.  Only 32lbs to go!

1. Green salsa is the only condiment you will ever need 
I use a certain green salsa for everything.  I am not fond of chicken, i add the salsa, ate too many eggs I add the salsa.  It works for everything and adds a little umph to my food, which I need sometimes.  Just be aware of the ingreidents and read the label before purchasing.  Sugar is added to so many things nowadays, just be careful.

2. Give your water some texture
As weird as this sounds, I don’t like taste or consistency of water.  It’s a sensory issue of mine so to improvise, I add chia seeds and a slice of lemon to it.  Viola problem solved.  If you add chia or flax seeds, be aware after a little bit, the seeds get a gel coating around them.  Hence why people use them in jams, no need for pectin.

3. Use veggies in place of pasta
Whatever you use pasta in, you can replace it with veggies.  The onlly thing limiting you, is your imagination.  There isn’t a need to use pasta unless you are too lazy to cut up a few veggies and do a little leg work.  It’s not as simple as boiling a pot of water.

4. Find a walking buddy
My walking buddy actually found me and then I acquired a few more along the way.  Even when they can’t, I try hard to stick with it as much as I can.

5. Make veggie fries
You will be amazed at all the veggies you can turn into fries.  Just quickly pop on Pinterest or use your imagination and come up with some fun new veggie fries.  No need to

6. Add a pop of color to your wardrobe
This might seem weird to add in this list, but this is all about your mental state.  A pop of color is known to make people happier.  Don’t wear black, brown, & white every day of your life.

7. Use veggies in place of crusts
This is one tip that I just love.  I use veggie for crusts all the time.  I make quiches with spaghetti squash crust or make them with sweet potato crust.

8. Having trouble sleeping, use natural ways to aide you
If you have sleeping problems like I do, then find a natural way to combat it whether it’s taking melatonin or drinking tea or taking a hot bath.  Find what works for you and incorporate it into your every day.

9. Learn healthy ways to relieve stress
Learning how to relieve stress in a positive way will only help you.  All to often we let our daily stresses get the better of us and in turn ruin our days, weeks etc.  Instead, find ways you can relieve stress in a positive way.  For me, when I am overwhelmed and completely stressed I will write or stop what I’m doing to take pictures, or jump in my car and blare the music.  We need to be able to take breaks in order to take care of ourselves.

10. Prepare food ahead of time 
This one has helped me but I haven’t always done the best with it.  I’m working on this more, trying to prepare my veggies & meats ahead of time, making it easier on me during the week.

11. Hemp hearts, chia seeds, & flax seeds are your newest friend
I use these in all sorts of things from side dishes to desserts to breakfast.  They are a great way to increase nutrients that you body needs.  You can also use these in place of breadcrumbs making your meals healthier.

12. Switch out soy sauce for coconut aminos 
If you haven’t tried coconut aminos, you really should.  I prefer the taste and love cooking or using it as a dipping sauce.

13. Find a form of exercise you truly enjoy 
Exercise is important in our lives, but not everyone needs to run to be healthy.  Find whatever exercise you enjoy and do it.  There is no need to compare & do what others are doing.  As long as you enjoy it, you will more likely stick with it for the long run.  For me, I like walking and biking so that’s what I do.  Sure, I probably would be losing more weight with running but I don’t like it so I know I wouldn’t stick with it.
